1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)

1 large egg

1/3 cup honey or maple syrup

1/4 cup vegetable oil (or melted coconut oil)

1 tsp vanilla extract

1 cup all-purpose flour (can substitute with whole wheat flour)

1/2 cup brown sugar, packed

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 1/2 cups fresh blueberries (or frozen, thawed, and drained)

Optional: 1/2 tsp cinnamon for a warm spice touch

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners or lightly grease with baking spray.

    Prepare the Oats: In a bowl, mix the rolled oats and buttermilk. Allow them to soak for about 10-15 minutes while you prepare the other ingredients. This helps soften the oats and enhances their texture.

      Mix Wet Ingredients: In another bowl, whisk together the egg, honey (or maple syrup), vegetable oil, and vanilla extract until well combined. Once the oats have soaked, stir them into the wet mixture.

        Combine Dry Ingredients: In a large mixing bowl, combine flour, brown sugar, baking powder, baking soda, salt, and cinnamon (if using). Whisk well to ensure there are no lumps.
