For the crust:

1 ½ cups all-purpose flour

½ cup powdered sugar

½ cup unsalted butter, softened

1 teaspoon vanilla extract

¼ teaspoon salt

For the filling:

2 large eggs

1 cup granulated sugar

¼ cup freshly squeezed lemon juice

Zest of 1 lemon

2 tablespoons all-purpose flour

1 cup fresh blueberries (you can use frozen, but fresh gives the best flavor)

Powdered sugar for dusting (optional)

Instructions
 

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the flour, powdered sugar, softened butter, vanilla extract, and salt. Mix until the mixture resembles coarse crumbs. Press this mixture evenly into the bottom of an ungreased 8x8 inch baking dish. Bake for 15 minutes or until lightly golden.

    Make the filling: In another bowl, whisk together the eggs and granulated sugar until well combined. Mix in the lemon juice and lemon zest until smooth. Then, add the flour and gently mix until just combined.

      Add blueberries: Fold the fresh blueberries into the filling mixture using a spatula. Be careful to not crush them too much to keep some whole berries intact for a nice texture in the bars.

        Combine layers: Pour the blueberry-lemon filling over the pre-baked crust, spreading it evenly.

          Bake: Return to the oven and bake for an additional 20-25 minutes, or until the filling is set and lightly golden on the edges.

            Cool and serve: Allow the bars to cool in the pan on a wire rack. Once cool, refrigerate for at least an hour to set further. When ready to serve, dust with powdered sugar if desired, cut into squares, and enjoy your delicious Blueberry Lemon Bars!
