1 large head of cauliflower, cut into bite-sized florets

4 slices of bacon, chopped

1 cup cherry tomatoes, halved

1 cup romaine lettuce, chopped

1/4 cup green onions, sliced

1/2 cup creamy dressing (mayonnaise or ranch)

1 tablespoon apple cider vinegar

Salt and pepper to taste

1/4 teaspoon smoked paprika (optional)

Roast the Cauliflower: Preheat your oven to 425°F (220°C). Toss the cauliflower florets in a bit of olive oil, salt, and pepper. Spread them out in a single layer on a baking sheet. Roast for 20-25 minutes, or until golden and tender, flipping halfway through for even roasting.

    Cook the Bacon: While the cauliflower is roasting, add the chopped bacon to a skillet over medium heat. Cook for about 5-7 minutes or until crispy. Once done, remove the bacon from the skillet and place it on a paper towel to drain excess grease.

      Prepare the Dressing: In a small bowl, mix the creamy dressing with apple cider vinegar, and if you’re using it, the smoked paprika. Stir well and set aside.

        Combine Ingredients: In a large bowl, combine the roasted cauliflower, crispy bacon, halved cherry tomatoes, chopped romaine lettuce, and sliced green onions.
