1 pound boneless, skinless chicken thighs, sliced into bite-sized pieces

2 cups fresh mushrooms (such as shiitake or cremini), sliced

1 tablespoon black pepper, freshly cracked

1 tablespoon cornstarch

3 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons sesame oil, divided

3 cloves garlic, minced

1 inch piece of ginger, minced

1 cup bell peppers (red or green), sliced

3 green onions, chopped

Salt to taste

Cooked jasmine rice, for serving

Instructions
 

Marinate the Chicken: In a medium bowl, combine the sliced chicken, soy sauce, oyster sauce, cornstarch, and a pinch of salt. Mix well to coat and let it marinate for at least 15 minutes while you prepare the mushrooms and vegetables.

    Prepare the Other Ingredients: Slice the mushrooms, bell peppers, and chop the green onions. Set them aside.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat until shimmering.

        Cook the Chicken: Add the marinated chicken to the pan in a single layer. Stir-fry for about 5-7 minutes or until the chicken is golden brown and cooked through. Remove the chicken from the pan and set aside.

          Sauté the Aromatics: In the same pan, add the remaining tablespoon of sesame oil, then toss in the minced garlic and ginger. Sauté for about 30 seconds until fragrant.

            Add the Mushrooms and Peppers: Add the sliced mushrooms to the pan and cook for about 4-5 minutes until they are tender and browning. Then, add the bell peppers and cook for another 3-4 minutes.

              Combine Everything: Return the cooked chicken to the pan with the vegetables. Sprinkle in the freshly cracked black pepper and stir well to combine all the flavors. Stir-fry for an additional 2-3 minutes, ensuring everything is heated through.

                Garnish and Serve: Remove from heat and top with chopped green onions. Serve immediately with hot jasmine rice.
