Ingredients

1/2 cup (1 stick) unsalted butter, melted

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup Biscoff cookie butter (plus extra for drizzling)

1/2 cup crushed Biscoff cookies (for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper for easier removal.

Mix Wet Ingredients: In a mixing bowl, combine the melted butter and granulated sugar. Stir well until the mixture is smooth and glossy. Beat in the eggs one at a time, followed by the vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the flour, cocoa powder, salt, and baking powder until well combined.

Combine Both Mixtures: Gradually add the dry mixture into the wet mixture, stirring just until blended. Be careful not to overmix; the batter should be thick and fudgy.

Add Cookie Butter: Gently fold in the Biscoff cookie butter until evenly distributed in the batter. It's okay if there are some swirls of cookie butter remaining.

Bake the Brownies: Pour the brownie batter into the prepared pan and spread it evenly. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Make the Topping: While the brownies are baking, crush the Biscoff cookies into small pieces (use a plastic bag and a rolling pin if needed).

Cool and Top: Once baked, allow the brownies to cool in the pan for 10 minutes. Drizzle some extra Biscoff cookie butter over the top and sprinkle the crushed Biscoff cookies evenly.

Slice and Serve: After they have cooled down for at least 30 minutes, slice into squares and serve. Enjoy your indulgent Biscoff bliss brownies!
