Beef & Mushroom Country Casserole

1 pound ground beef

8 ounces cremini or button mushrooms, sliced

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup frozen peas and carrots mix

1 can (10.5 ounces) cream of mushroom soup

1 cup beef broth

2 teaspoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

4 cups prepared mashed potatoes (store-bought or homemade)

1 cup shredded cheddar cheese

Chopped fresh parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

      Sauté the Vegetables: Add the chopped onion and sliced mushrooms to the skillet with the beef, cooking until the onions become translucent and the mushrooms are softened, about 5 minutes. Stir in the minced garlic and cook for 1 more minute until fragrant.

        Combine Mixture: Stir in the frozen peas and carrots, cream of mushroom soup, beef broth, Worcestershire sauce, dried thyme, smoked paprika, salt, and pepper. Mix well until everything is combined and heated through, bringing it to a gentle simmer.

          Assemble the Casserole: In a greased 9x13-inch casserole dish, spread the beef and mushroom mixture evenly on the bottom. Top it with the prepared mashed potatoes, smoothing them out to cover the filling completely. Sprinkle the shredded cheddar cheese evenly on top.

            Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly, and the edges are slightly golden.

              Garnish and Serve: Remove from oven and let it cool for a few minutes. Garnish with chopped fresh parsley if desired, then serve warm and enjoy!
