1 lb (450g) ground beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, diced (red or green)

1 can (14.5 oz) diced tomatoes with herbs

1 cup beef broth

2 cups uncooked rotini pasta

2 cups shredded mozzarella cheese

1 cup sour cream

1 tablespoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

1 cup grated Parmesan cheese

Fresh parsley for garnish (optional)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, for about 5-7 minutes. Drain any excess fat.

      Add Vegetables: Stir in the diced onion, garlic, and bell pepper to the skillet with beef. Sauté for 3-4 minutes until the vegetables are tender.

        Mix Ingredients: Add the diced tomatoes (with juices), beef broth, uncooked rotini pasta, Italian seasoning, salt, and black pepper. Stir well to combine all ingredients.

          Simmer: Let the mixture simmer for about 5 minutes, stirring occasionally. This helps to soften the pasta slightly before baking.

            Add Creaminess: Lower the heat and fold in the sour cream until well mixed, creating a creamy consistency.

              Transfer to Casserole Dish: Pour the beef and pasta mixture into a greased 9x13-inch casserole dish. Spread it evenly.
