Beef Lombardi Casserole

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper, chopped (any color)

1 can (15 oz) diced tomatoes, drained

1 can (8 oz) tomato sauce

1 can (15 oz) kidney beans, drained and rinsed

1 cup uncooked elbow macaroni

1 cup beef broth

1 tsp dried Italian seasoning

1/2 tsp paprika

Salt and pepper to taste

2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef Mixture: In a large skillet over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain any excess grease.

      Sauté Vegetables: Add the diced onion, minced garlic, and bell pepper to the skillet. Sauté for an additional 4-5 minutes, or until the vegetables have softened.

        Combine Ingredients: Stir in the drained diced tomatoes, tomato sauce, kidney beans, uncooked macaroni, beef broth, Italian seasoning, paprika, salt, and pepper. Mix until well combined.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13-inch baking dish. Spread it out evenly.

            Add Cheese: Sprinkle shredded mozzarella cheese evenly over the top of the casserole, followed by the grated Parmesan cheese.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and slightly golden.

                Garnish and Serve: Once out of the oven, let the casserole sit for 5-10 minutes. Garnish with fresh parsley before serving.
