BBQ Chicken Wraps

2 cups cooked chicken, shredded (preferably rotisserie or grilled)

1/2 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded sharp cheddar cheese

1 cup coleslaw mix

1/2 cup ranch dressing (optional for added creaminess)

4 large flour tortillas or whole wheat wraps

1/2 red onion, thinly sliced

1/2 cup diced tomatoes

Fresh cilantro leaves for garnish (optional)

Salt and pepper to taste

Prepare the Chicken: In a medium bowl, combine the shredded chicken with the BBQ sauce. Mix until the chicken is well-coated. Season with salt and pepper to taste.

    Make the Coleslaw: In a separate bowl, mix the coleslaw mix with ranch dressing (if using) to create a creamy coleslaw. Toss until all the coleslaw mix is evenly coated. Set aside.

      Warm the Tortillas: In a dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until pliable. This will make wrapping easier.

        Assemble the Wraps: Lay a warm tortilla flat on a clean surface. In the center, layer approximately 1/2 cup of the BBQ chicken mixture, followed by a handful of coleslaw, a sprinkle of cheddar cheese, a few slices of red onion, and tomatoes. If you like, add some chopped cilantro for extra flavor.

          Wrap It Up: Fold the sides of the tortilla over the filling, then roll it tightly from the bottom up to form a wrap. Repeat this process for each tortilla.

            Serve: Slice each wrap in half diagonally for easier handling. You can serve these wraps cold or place them back in the skillet (seam side down) for an additional minute to crisp up the outsides.
