Ingredients

2 boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

6 cups mixed salad greens (spinach, arugula, and romaine)

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 cup black beans, rinsed and drained

1 avocado, diced

1/2 red onion, thinly sliced

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

1/2 cup ranch dressing (store-bought or homemade)

Juice of 1 lime

Instructions

Marinate Chicken: In a bowl, coat the chicken breasts with BBQ sauce. Cover and let marinate in the fridge for at least 30 minutes (or up to overnight for more flavor).

Cook Chicken: Preheat your grill or a grill pan over medium-high heat. Remove the chicken from the marinade, discarding any excess sauce. Grill the chicken for about 6-8 minutes per side or until the internal temperature reaches 165°F (74°C). Let it rest for 5 minutes before slicing.

Prepare the Salad Base: In a large salad bowl, combine the mixed greens, cherry tomatoes, corn, black beans, diced avocado, and red onion. Toss gently to combine.

Slice Chicken: Once the chicken has rested, slice it into strips and add it on top of the salad.

Drizzle and Garnish: Sprinkle the shredded cheddar cheese and chopped cilantro over the salad. Drizzle with ranch dressing and a squeeze of lime juice. Season with salt and pepper to taste.

Serve: Toss the salad gently to ensure all ingredients are mixed well, then plate up and enjoy your Smoky BBQ Chicken Salad with Ranch Drizzle!
