BBQ Chicken Pasta Skillet

2 cups penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 cup BBQ sauce (homemade or store-bought)

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 cup shredded mozzarella cheese

1/4 cup green onions, thinly sliced (for garnish)

Optional: Fresh cilantro, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, followed by garlic powder, onion powder, smoked paprika, salt, and pepper. Sauté for about 5-7 minutes, or until the chicken is no longer pink and fully cooked.

      Add Vegetables: Once the chicken is cooked, add the diced red bell pepper and corn to the skillet. Sauté for another 3-4 minutes, allowing the vegetables to soften slightly.

        Combine with BBQ Sauce: Pour in the BBQ sauce, mixing it well with the chicken and vegetables. Let it simmer for about 2-3 minutes to allow the flavors to meld.

          Mix in Pasta: Add the cooked penne pasta to the skillet and gently toss everything together until the pasta is evenly coated in the sauce. If the mixture seems too dry, you can add a splash of water or more BBQ sauce to your liking.

            Add Cheese: Sprinkle the shredded mozzarella cheese over the top of the pasta mixture. Cover the skillet with a lid and reduce the heat to low. Allow the cheese to melt, about 3-5 minutes.
