2 pounds cooked brisket, sliced or shredded

1 cup BBQ sauce (your favorite brand or homemade)

4 large hoagie rolls or sub buns

2 cups shredded sharp cheddar cheese

1 medium onion, sliced thinly

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Optional garnishes: pickles, jalapeƱos, or coleslaw

Instructions
 

Prepare the Onions: In a large skillet over medium heat, add olive oil. Once hot, add the sliced onions and season with salt and pepper. Cook the onions for about 10-12 minutes until they become caramelized and golden brown. Stir occasionally to prevent burning.

    Mix Brisket and Sauce: In a large mixing bowl, combine the sliced or shredded brisket with the BBQ sauce. Ensure the meat is thoroughly coated. Adjust seasoning with garlic powder and smoked paprika for extra flavor.

      Toast the Rolls: Preheat your oven broiler. Cut the hoagie rolls in half lengthwise and arrange them on a baking sheet, cut side up. Place them under the broiler for about 2-3 minutes until just lightly toasted.

        Assemble the Melts: Take the toasted rolls from the oven. Evenly distribute the BBQ brisket mixture onto the bottom half of each hoagie roll. Top with the caramelized onions and then generously sprinkle with shredded cheddar cheese.

          Broil the Melts: Return the assembled melts to the oven, under the broiler, for 2-4 minutes or until the cheese is bubbly and golden. Keep an eye on them to avoid burning!

            Serve: Remove from the oven, let cool for a minute, then if desired, add pickles, jalapeƱos, or coleslaw on top for added crunch and flavor. Close the sandwiches, slice in half, and serve warm.
