2 large flatbreads (store-bought or homemade)

1 cup fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/2 cup pine nuts (or walnuts)

2 cloves garlic, minced

1/2 cup extra virgin olive oil

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 medium zucchini, thinly sliced

1 red bell pepper, thinly sliced

1 cup mozzarella cheese, shredded

Optional: Balsamic glaze for drizzling

Make the Basil Pesto: In a food processor, combine fresh basil leaves, Parmesan cheese, pine nuts, garlic, and a pinch of salt and pepper. Pulse until it forms a coarse mixture. With the processor running, gradually drizzle in the olive oil until the pesto is smooth and well combined. Taste and adjust seasoning if necessary. Set aside.

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Prepare the Flatbreads: Place the flatbreads on a baking sheet lined with parchment paper. Spread a generous amount of basil pesto evenly over each flatbread, leaving a small border around the edges.

        Add the Veggies: Arrange the cherry tomatoes, sliced zucchini, and red bell pepper evenly across the flatbreads over the pesto. Sprinkle the shredded mozzarella cheese on top of the vegetables.

          Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes or until the flatbreads are crispy and the cheese is melted and bubbling.
