Ingredients

4 ripe bananas

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar

1/4 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1 teaspoon vanilla extract

1/2 cup Greek yogurt or vanilla ice cream for serving (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease an 8-inch square baking dish or similarly sized round dish.

Prepare the Bananas: Peel the ripe bananas and slice them into medium-thick rounds. Place them in the prepared baking dish, spreading them out evenly.

Make the Topping: In a mixing bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Mix these dry ingredients together.

Incorporate Butter and Nuts: Pour the melted butter and vanilla extract into the dry mixture. Stir until everything is well combined. If you’re using walnuts or pecans, fold them in at this stage for added crunch.

Assemble the Crumble: Evenly distribute the oat mixture over the sliced bananas in the baking dish, ensuring all the bananas are covered.

Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the topping is golden brown and the bananas are bubbling. You might want to check it at the 20-minute mark to ensure it’s baking evenly.

Cool and Serve: Once baked, remove the crumble from the oven and allow it to cool for about 10 minutes. Serve warm with a dollop of Greek yogurt or a scoop of vanilla ice cream on top for extra indulgence.
