Balsamic Vinaigrette Breakfast Muffins

1 ½ cups all-purpose flour

½ cup rolled oats

½ cup brown sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon cinnamon

2 large eggs

¾ cup whole milk

⅓ cup balsamic vinaigrette (preferably homemade)

¼ cup unsalted butter, melted

1 cup chopped fresh spinach

½ cup shredded cheddar cheese

½ cup chopped walnuts (optional)

¼ cup sun-dried tomatoes, chopped (for an extra flavor punch!)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease or line a standard muffin tin with paper liners.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, rolled oats, brown sugar, baking powder, baking soda, salt, and cinnamon. Stir well to ensure all ingredients are evenly distributed.

      Combine Wet Ingredients: In a separate bowl, whisk together the eggs, whole milk, balsamic vinaigrette, and melted butter until thoroughly mixed.

        Combine Mixtures: Make a well in the center of the dry ingredients and pour in the wet mixture. Gently fold with a spatula until just combined. Be careful not to overmix!

          Add the Good Stuff: Fold in the chopped spinach, shredded cheddar cheese, walnuts (if using), and sun-dried tomatoes. This will give your muffins a deliciously unique texture and flavor.

            Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
