2 cups fresh strawberries, hulled and halved

1 tablespoon balsamic vinegar

1 teaspoon honey

Salt and pepper, to taste

2 teaspoons olive oil

2 boneless, skinless chicken breasts

6 cups mixed salad greens (such as arugula, spinach, and romaine)

1/2 cup crumbled feta cheese

1/4 cup sliced almonds (toasted, for extra flavor)

1 avocado, diced

1/4 cup balsamic glaze (for drizzling)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Strawberries: In a medium bowl, combine the hulled and halved strawberries with balsamic vinegar, honey, a pinch of salt, and pepper. Toss gently to coat the strawberries evenly.

      Roast the Strawberries: Spread the strawberries on a baking sheet lined with parchment paper and roast in the preheated oven for about 15-20 minutes, or until softened and slightly caramelized. Keep an eye on them to avoid burning.

        Cook the Chicken: While the strawberries are roasting, heat the olive oil in a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Sear the chicken for about 6-7 minutes on each side or until it’s cooked through and has a golden brown crust. Use a meat thermometer to ensure it reaches an internal temperature of 165°F (75°C).
