Ingredients

12 fresh figs, halved

3 tablespoons balsamic vinegar

1 tablespoon honey

1 tablespoon olive oil

Salt and pepper, to taste

1 French baguette, sliced into 1/2 inch thick pieces

8 oz creamy goat cheese (or soft ricotta for a milder taste)

Fresh arugula or microgreens, for garnish

Optional: chopped walnuts or pistachios for crunch

Instructions

Preheat the oven to 400°F (200°C).

Prepare the figs: In a medium bowl, toss the halved figs with balsamic vinegar, honey, olive oil, and a pinch of salt and pepper. Ensure they are evenly coated.

Roast the figs: Place the figs cut-side up on a baking sheet lined with parchment paper. Roast in the preheated oven for about 15 minutes, or until the figs are soft and slightly caramelized. Remove from the oven and set aside.

Toast the baguette slices: While the figs are roasting, arrange the baguette slices on another baking sheet. Brush each slice lightly with olive oil and toast in the oven for about 5-7 minutes, or until they are golden and crisp.

Assemble the crostinis: Spread a generous layer of goat cheese on each toasted baguette slice. Top with a roasted fig half, ensuring the cut side is facing up.

Garnish: If desired, sprinkle with chopped walnuts or pistachios for added texture and crunch. Finish off with a few arugula leaves or microgreens for freshness.

Serve: Arrange the crostinis on a serving platter. Drizzle with additional balsamic vinegar or reduction for an elegant touch, if desired.
