Balsamic–Glazed Pork Tenderloin

1 ½ pounds pork tenderloin

1 cup balsamic vinegar

½ cup honey

2 tablespoons Dijon mustard

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

½ cup chicken broth

Fresh rosemary sprigs, for garnish (optional)

Instructions
 

Marinate the Pork: In a bowl, whisk together balsamic vinegar, honey, Dijon mustard, minced garlic, rosemary, thyme, salt, and pepper. Place the pork tenderloin in a resealable plastic bag or a shallow dish, and pour the marinade over the pork. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour (or up to overnight for more flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Pork: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the pork from the marinade (reserve the marinade for later) and sear it in the hot skillet for 3-4 minutes on each side until it's golden brown.

        Add Broth and Bake: Once seared, add the chicken broth to the skillet. Pour the reserved marinade over the pork. Transfer the skillet to the preheated oven and roast for about 20-25 minutes or until the pork reaches an internal temperature of 145°F (63°C).

          Glaze the Pork: After removing it from the oven, transfer the pork to a cutting board and let it rest for 5 minutes before slicing. Meanwhile, place the skillet back on the stovetop over medium heat. Bring the remaining sauce to a simmer, allowing it to reduce and thicken slightly for about 5-7 minutes.
