Baked Zucchini Parmesan Fries

2 medium zucchini, sliced into fry shapes

1 cup breadcrumbs (preferably whole wheat or panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Marinara sauce (for dipping, optional)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.

    Prepare the Zucchini: Wash the zucchini and cut off the ends. Slice them into long, thin strips resembling fries, about ¼ inch thick.

      Make the Breading Mixture: In a mixing bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. Mix well and set aside.

        Prepare the Egg Wash: In another bowl, beat the eggs with the olive oil until combined. This will be your egg wash to help the breadcrumbs stick to the zucchini.
