Baked Spinach and Sausage Ziti

12 ounces ziti pasta

1 tablespoon olive oil

1 pound Italian sausage (bulk or casings removed)

3 cloves garlic, minced

1 onion, chopped

4 cups fresh spinach (or 2 cups frozen, thawed and drained)

24 ounces marinara sauce (homemade or store-bought)

1 teaspoon Italian seasoning

1 teaspoon crushed red pepper flakes (optional)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the ziti according to package directions until al dente. Drain and set aside.

      Sauté the Sausage: In a large skillet over medium heat, heat the olive oil. Add the Italian sausage, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

        Add Vegetables: Stir in the chopped onion and minced garlic, cooking until the onion is translucent, around 3-4 minutes. Add the spinach and cook just until wilted (if using fresh).

          Combine with Sauce: Pour in the marinara sauce, Italian seasoning, crushed red pepper flakes (if using), and season with salt and pepper. Let simmer for about 5 minutes.

            Mix Pasta with Sauce: In a large mixing bowl, combine the cooked ziti with the sausage and spinach mixture. Add in the ricotta cheese and half of the mozzarella, mixing until well incorporated.

              Assemble the Ziti: Transfer the mixture to a greased 9x13 inch (or similar size) baking dish. Spread evenly and top with the remaining mozzarella and Parmesan cheese.

                Bake: Cover the dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden brown.

                  Garnish and Serve:Remove from the oven and let it cool for a few minutes. Garnish with fresh basil if desired, then serve warm.
