2 cups rolled oats

1 teaspoon baking powder

1 teaspoon cinnamon

1/4 teaspoon salt

2 cups almond milk (or milk of choice)

1/2 cup maple syrup (or honey)

2 large eggs

1 teaspoon vanilla extract

1 cup mixed berries (fresh or frozen; blueberries, raspberries, strawberries)

1/2 cup chopped nuts (walnuts, pecans, or almonds)

Optional: 1/4 cup chocolate chips or coconut flakes for added sweetness

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.

    Combine Dry Ingredients: In a large bowl, mix together the rolled oats, baking powder, cinnamon, and salt until well combined.

      Mix Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, eggs, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until fully combined. Gently fold in the mixed berries and chopped nuts, and chocolate chips or coconut flakes, if using.

          Fill the Muffin Tin: Scoop the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.

            Bake: Place the muffin tin in the oven and bake for 25-30 minutes, or until the edges are golden brown and the centers are set.

              Cool and Serve: Remove from the oven and allow the oatmeal cups to cool in the tin for 5 minutes before transferring to a wire rack. Enjoy warm or at room temperature! They can be stored in an airtight container in the fridge for up to a week.
