Ingredients

1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup buttermilk

1/3 cup vegetable oil

2 large eggs

1 cup shredded sharp cheddar cheese

1/2 cup diced fresh jalapeños (seeds removed for less heat)

1/4 cup honey (optional for a touch of sweetness)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease an 8-inch square baking dish or line it with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and black pepper. Whisk to ensure the dry ingredients are well mixed.

Prepare Wet Ingredients: In a separate bowl, whisk together the buttermilk, vegetable oil, and eggs until fully combined. If you like a hint of sweetness, add the honey at this stage and mix well.

Combine Ingredients: Pour the wet mixture into the dry ingredients. Stir gently until just combined; be careful not to overmix. You want a few lumps to ensure the cornbread stays fluffy.

Add Jalapeños and Cheese: Fold in the diced jalapeños and shredded cheddar cheese, ensuring they are evenly distributed throughout the batter.

Bake the Cornbread: Pour the batter into the prepared baking dish and spread it evenly with a spatula. Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Serve: Let the cornbread cool in the dish for about 10 minutes before slicing it into squares. Serve warm with butter or alongside your favorite chili or soup.
