Baked Green Chili Chicken Tenders

1 lb chicken tenders

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 tsp smoked paprika

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

1 cup diced green chilies (canned or fresh)

1/4 cup grated Parmesan cheese

2 tbsp fresh cilantro, finely chopped (for garnish)

Cooking spray or olive oil

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken tenders and buttermilk. Ensure the tenders are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours to tenderize the chicken.

    Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray or brush with olive oil.

      Prepare the Breading: In a shallow dish, combine the panko breadcrumbs, flour, smoked paprika, garlic powder, onion powder, cumin, salt, and black pepper. Mix well. Stir in the diced green chilies and grated Parmesan cheese until evenly distributed.

        Coat the Chicken: Remove the chicken tenders from the buttermilk, shaking off excess. Dredge each tender in the breadcrumb mixture, pressing gently to ensure the coating adheres well.

          Bake the Tenders: Place the coated chicken tenders on the prepared baking sheet. Lightly spray the tops with cooking spray to promote browning. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the tenders are golden brown and crispy.

            Serve: Remove the tenders from the oven and let them rest for a couple of minutes. Garnish with fresh cilantro, and serve with your choice of dipping sauce, like ranch or a spicy green salsa.
