12 wonton wrappers

1 cup fresh spinach, chopped

8 oz feta cheese, crumbled

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tbsp olive oil

1/2 tsp onion powder

1/2 tsp black pepper

1/4 tsp salt

1 tbsp fresh lemon juice

1 tbsp fresh dill or parsley, chopped (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Cups: Lightly spray a muffin tin with cooking spray. Gently press one wonton wrapper into each cup of the muffin tin, ensuring it covers the bottom and sides. Bake for 5-7 minutes, until the edges are golden brown and crisp. Remove from the oven and set aside.

      Sauté Spinach: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

        Mix the Filling: In a mixing bowl, combine the crumbled feta cheese, ricotta cheese, grated Parmesan, wilted spinach (drained of excess liquid), onion powder, black pepper, salt, lemon juice, and fresh herbs (if using). Mix well until all ingredients are thoroughly combined.

          Fill the Wonton Cups: Spoon the cheese and spinach mixture into each baked wonton wrapper, filling them generously.

            Bake Again: Return the filled wonton cups to the oven and bake for an additional 10-12 minutes, or until the filling is bubbly and the tops are lightly golden.

              Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes. Serve warm as an appetizer or snack, garnished with extra herbs if desired.
