Baked Feta Pasta with Summer Cherry Tomatoes

8 ounces (about 225g) pasta (such as penne or fusilli)

1 pint (about 300g) cherry tomatoes, halved

8 ounces (about 225g) feta cheese

1/4 cup (60ml) extra-virgin olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish

Freshly grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a 9x13-inch (or similar size) baking dish, combine the halved cherry tomatoes, minced garlic, olive oil, dried oregano, salt, and pepper. Toss to coat the tomatoes evenly.

      Add the Feta: Place the block of feta cheese in the center of the tomato mixture. Drizzle a little olive oil on top of the feta and sprinkle with extra salt and pepper.

        Bake: Transfer the baking dish to the preheated oven and bake for about 25-30 minutes, or until the tomatoes are blistered and the feta is golden and soft.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain, reserving about 1/2 cup of pasta water.

            Combine Everything: Once the feta and tomatoes are done baking, remove the dish from the oven. Use a fork to mash the feta into the tomatoes, creating a creamy sauce.

              Mix the Pasta: Add the drained pasta to the baking dish and toss well to combine. If the mixture seems dry, add some reserved pasta water, a little at a time, until you reach your desired consistency.

                Garnish and Serve: Divide the pasta into serving bowls, garnish with fresh basil leaves, and sprinkle with freshly grated Parmesan cheese if desired. Enjoy your delicious baked feta pasta!
