2 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably seasoned)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

1 large egg, lightly beaten

For the Pasta:

8 oz penne pasta (or preferred shape)

1 cup Caesar dressing (store-bought or homemade)

1/2 cup cherry tomatoes, halved

1/4 cup sliced black olives (optional)

1 cup fresh spinach or arugula

1/2 cup shredded mozzarella cheese

For Garnish:

Extra Parmesan cheese

Fresh parsley, chopped (optional)

Croutons (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Chicken: In a bowl, combine breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and pepper. Dip each chicken breast in the beaten egg, then coat thoroughly with the breadcrumb mixture. Place the coated chicken breasts onto the prepared baking sheet.
