Baked Cheddar Jalapeño Potato Skins

4 large russet potatoes

1 tablespoon olive oil

Salt and black pepper, to taste

1 cup sharp cheddar cheese, shredded

1/2 cup cream cheese, softened

1/4 cup sour cream

2-3 fresh jalapeños, finely chopped (seeds removed for less heat)

2 green onions, chopped

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Optional: fresh cilantro for garnish

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: Scrub the russet potatoes thoroughly under cold water. Pat them dry, then poke several holes in each potato with a fork. Rub each potato with olive oil and sprinkle with salt and black pepper.

      Bake Potatoes: Place the prepared potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes or until the potatoes are fork-tender.

        Scoop Out Flesh: Once baked, remove the potatoes from the oven and let them cool for a few minutes until manageable. Cut each potato in half lengthwise and carefully scoop out the flesh, leaving about 1/4 inch of potato around the edges to form the skins.

          Prepare Filling: In a large mixing bowl, combine the scooped-out potato flesh, cheddar cheese, cream cheese, sour cream, chopped jalapeños, green onions, garlic powder, smoked paprika, salt, and pepper. Mix well until creamy and fully combined.

            Fill Potato Skins: Generously spoon the filling mixture back into each potato skin, packing it in lightly.

              Final Bake: Arrange the filled potato skins on a baking sheet (skin side down) and return them to the oven. Bake for an additional 15-20 minutes at 400°F (200°C) or until the tops are golden and bubbly.

                Garnish and Serve: Once finished, remove the potato skins from the oven. If desired, garnish with fresh cilantro and additional sliced green onions. Serve warm with extra sour cream on the side.
