Ingredients

For the apple filling:

3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon all-purpose flour

For the crumble topping:

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/3 cup unsalted butter, melted

For serving (optional):

Vanilla ice cream or whipped cream

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a cupcake tin or line it with cupcake liners.

Prepare the Apple Filling: In a medium bowl, combine the diced apples, granulated sugar, ground cinnamon, lemon juice, and flour. Toss until the apples are evenly coated. Set aside.

Make the Crumble Topping: In a separate bowl, mix the rolled oats, all-purpose flour, brown sugar, ground cinnamon, and salt. Add the melted butter and stir until the mixture resembles wet sand, with clumps forming.

Assemble the Cups: Evenly distribute a spoonful of the apple filling into each cup of the prepared cupcake tin. Top each cup with a generous sprinkle of the crumble mixture, ensuring good coverage over the apples.

Bake: Bake in the preheated oven for 20-25 minutes, or until the topping is golden brown and the apples are bubbly.

Cool and Serve: Remove the cups from the oven and let them cool for a few minutes. Carefully take them out of the tin. Serve warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
