1 large bag of tortilla chips

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked and seasoned ground beef (or plant-based meat alternative)

1 can (15 oz) black beans, rinsed and drained

1 cup corn kernels (fresh, frozen, or canned)

1 jalapeño, sliced (optional for spice)

1 cup diced tomatoes (fresh or canned)

1 small red onion, finely chopped

1 avocado, sliced

1/2 cup sour cream or Greek yogurt

1/4 cup fresh cilantro, chopped

2 tablespoons olive oil

1 tablespoon taco seasoning (or to taste)

Salt and pepper to taste

Lime wedges for serving

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meat: In a skillet over medium heat, add the olive oil. Once hot, sauté the red onion for about 2-3 minutes until translucent. Add the ground beef (or plant-based meat), taco seasoning, and a pinch of salt and pepper. Cook until browned and fully cooked through. Once done, remove from heat.

      Layer the Nachos: On a large baking sheet or oven-safe platter, spread half of the tortilla chips in an even layer.

        Add Toppings:

          - Sprinkle half of the cheddar and mozzarella cheese over the chips.

            - Next, evenly distribute half of the cooked ground beef and then the black beans.

              - Follow with the corn, diced tomatoes, and sliced jalapeños if using.

                - Top with the remaining cheese, followed by the rest of the chips.

                  Bake the Nachos: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.
