2 cups cooked chicken breast, shredded or diced

1 ripe avocado, peeled and pitted

2 tablespoons Greek yogurt (or mayonnaise if preferred)

1 tablespoon Dijon mustard

1 tablespoon fresh lime juice

1/4 cup red onion, finely chopped

1/4 cup celery, finely diced

1/4 cup fresh cilantro or parsley, chopped

Salt and pepper to taste

Optional: 1/4 teaspoon garlic powder

Optional: 1/4 teaspoon smoked paprika for a hint of smokiness

Instructions
 

In a large mixing bowl, combine the cooked chicken, red onion, celery, and chopped herbs (cilantro or parsley).

    In a separate bowl, mash the ripe avocado with a fork until smooth yet slightly chunky for texture.

      Add the Greek yogurt, Dijon mustard, lime juice, garlic powder, and smoked paprika (if using) to the mashed avocado. Mix until well combined and creamy.

        Pour the avocado mixture over the chicken and vegetable mixture. Gently fold everything together until the chicken is evenly coated with the avocado dressing.

          Season with salt and pepper to taste. If you like a bit more acidity, add an extra squeeze of lime juice.
