Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 tablespoons vegetable oil

4 cloves garlic, minced

2-3 Thai bird’s eye chilies, finely chopped (adjust for spice preference)

1 onion, thinly sliced

1 red bell pepper, julienned

1 cup green beans, trimmed and cut into 2-inch pieces

2 cups fresh Thai basil leaves

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon fish sauce

1 tablespoon sugar (brown sugar preferred)

Cooked jasmine rice for serving

Lime wedges, for garnish

Instructions

Marinate the Beef: In a bowl, combine the sliced beef with 1 tablespoon soy sauce, 1 teaspoon sugar, and a pinch of black pepper. Let sit for 15-20 minutes to absorb the flavors.

Prepare the Sauce: In a small bowl, mix together the remaining soy sauce, oyster sauce, fish sauce, and sugar. Stir until the sugar is dissolved and set aside.

Heat the Pan: In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering.

Cook the Garlic and Chilies: Add the minced garlic and chopped bird's eye chilies to the pan and stir-fry for about 30 seconds until fragrant.

Stir-Fry the Beef: Increase the heat to high, add the marinated beef to the pan in a single layer, and allow it to sear for about 2 minutes without stirring. Once it is browned, stir-fry for an additional 2-3 minutes until the beef is cooked through. Remove from the pan and set aside.

Sauté the Vegetables: In the same pan, add the sliced onion, bell pepper, and green beans. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Combine Ingredients: Return the beef to the pan. Pour in the sauce mixture and add the Thai basil leaves. Stir-fry everything together for another 1-2 minutes, until the basil is wilted and the sauce coats the beef and vegetables well.

Serve: Serve the Thai basil beef stir-fry hot over jasmine rice and garnish with lime wedges for added zest.
