Instructions

Prepare the Apple Pie Filling:

    - In a medium saucepan over medium heat, combine the diced apples, brown sugar, cinnamon, lemon juice, and flour.

      - Cook while stirring occasionally until the apples are soft and the mixture is bubbly, about 5-7 minutes. Set it aside to cool.

        Make the Cupcake Batter:

          - Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.

            - In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

              - In a separate bowl, cream the softened butter and granulated sugar together until light and fluffy.

                - Beat in the eggs one at a time, then stir in the vanilla extract.

                  - Gradually mix in the dry ingredients alternating with the milk, starting and ending with the flour mixture. Mix until just combined.

                    Fill the Cupcake Liners:

                      - Spoon a small dollop of cupcake batter (about a tablespoon) into the bottom of each cupcake liner.

                        - Add about a tablespoon of the cooled apple pie filling on top of the batter in each liner.

                          - Cover the filling with more batter until each liner is about ¾ full.

                            Bake the Cupcakes:

                              - Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                                - Remove from the oven and allow the cupcakes to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

                                  Prepare the Cinnamon Buttercream Frosting:

                                    - In a mixing bowl, beat the softened butter until creamy.

                                      - Gradually add the powdered sugar and mix on low speed until blended.

                                        - Add the heavy cream, cinnamon, and vanilla extract, and beat on high speed until the frosting is light and fluffy.

                                          Frost Your Cupcakes:

                                            - Once the cupcakes are completely cooled, generously pipe or spread the cinnamon buttercream frosting on top of each cupcake.

                                              - For extra flair, sprinkle the cinnamon-sugar mixture on top of the frosted cupcakes and drizzle with caramel sauce if desired.

                                                Serve and Enjoy:

                                                  - These delightful Apple Pie Stuffed Cupcakes are perfect for any occasion! Serve them at parties, family gatherings, or just treat yourself to a sweet indulgence!
