2 cups rolled oats

1 tsp baking powder

1 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

1 1/2 cups milk (dairy or non-dairy)

1/2 cup unsweetened applesauce

1/4 cup maple syrup (or honey)

1 tbsp vanilla extract

2 medium apples, peeled, cored, and diced (about 2 cups)

1/2 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with cooking spray or line with muffin liners.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir until well incorporated.

      Mix Wet Ingredients: In another bowl, whisk together the milk, applesauce, maple syrup, and vanilla extract until smooth.

        Combine Mixtures: Pour the wet ingredients into the dry ingredient mixture and stir until fully combined. Fold in the diced apples, nuts (if using), and raisins or cranberries.

          Fill Muffin Tin: Spoon the oatmeal mixture evenly into the prepared muffin tin cups, filling them about 3/4 full. You can press down lightly to ensure they hold their shape.
