4 cups of day-old brioche bread, cut into 1-inch cubes

2 large apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1 cup chopped pecans

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup brown sugar

1 tsp pure vanilla extract

1 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1 tbsp unsalted butter (for greasing the muffin tin)

Maple syrup and powdered sugar (for serving, optional)

Instructions
 

Prepare the Muffin Tin: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with unsalted butter to prevent sticking. Set aside.

    Toast the Pecans: Place the chopped pecans in a small skillet over medium heat. Toast them for 4-5 minutes until fragrant, stirring frequently to prevent burning. Remove from heat and set aside.

      Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, brown sugar, vanilla extract, ground cinnamon, nutmeg, and salt until well combined.

        Combine Bread and Apples: In another bowl, combine the brioche bread cubes, diced apples, and toasted pecans. Pour the egg mixture over the bread mixture. Gently fold the mixture to ensure all bread cubes are coated with the egg mixture. Let it sit for about 10 minutes to soak.

          Fill the Muffin Tin: Scoop the mixture into each muffin cup, filling them about 3/4 full. Press the mixture down gently to pack each cup slightly.
