16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

3 large eggs

1/2 cup sour cream

1/4 cup all-purpose flour

1 tsp ground cinnamon

For the Apple Layer:

3 cups apples, peeled, cored, and diced (about 3-4 medium-sized apples)

1/4 cup brown sugar

1 tsp ground cinnamon

1 tbsp lemon juice

For the Crisp Topping:

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar

1/2 tsp ground cinnamon

1/2 cup unsalted butter, melted

1/4 tsp salt

Prepare the Apple Layer: In a medium bowl, toss the diced apples with brown sugar, ground cinnamon, and lemon juice. Let it sit for about 15 minutes to release juices while you prepare the cheesecake batter.

    Make the Cheesecake Batter: In a large mixing bowl, combine softened cream cheese and granulated sugar. Beat with an electric mixer until smooth and creamy, about 2-3 minutes. Add in the vanilla extract, eggs (one at a time), sour cream, flour, and ground cinnamon. Mix until everything is well combined and smooth.

      Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and set aside.

        Layering: Pour half of the cheesecake batter into the prepared springform pan. Next, evenly distribute the apple mixture over the cheesecake layer. Top with the remaining cheesecake batter.

          Prepare the Crisp Topping: In a medium bowl, combine rolled oats, flour, brown sugar, ground cinnamon, and salt. Pour in the melted butter and mix until crumbly.
