Apple Cinnamon Oat Muffins

1 cup rolled oats

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup brown sugar, packed

1/2 cup unsweetened applesauce

1/4 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 cup peeled and diced apples (preferably Granny Smith or Fuji)

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    In a large bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, ground cinnamon, and salt. Mix well to ensure the dry ingredients are evenly distributed.

      In a separate bowl, whisk together the brown sugar, applesauce, oil, eggs, and vanilla extract until smooth and well combined.

        Add the wet ingredients to the dry ingredients, mixing gently until just combined. Be careful not to overmix, as this can make the muffins dense.

          Fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.
