1 cup all-purpose flour

½ cup whole wheat flour

½ cup granulated sugar

¼ cup brown sugar, packed

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup unsweetened applesauce

2 large eggs

⅓ cup vegetable oil

1 tsp vanilla extract

1 cup finely diced apples (preferably Granny Smith or Honeycrisp)

Optional: ¼ cup chopped walnuts or pecans for added crunch

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan or line it with mini muffin liners.

    In a large mixing bowl, combine all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg. Mix well until thoroughly combined.

      In a separate bowl, whisk together the applesauce, eggs, vegetable oil, and vanilla extract until smooth.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over-mix.

          Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

            Scoop the batter into the prepared mini muffin pan, filling each cup about ¾ full.

              Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted in the center comes out clean.

                Remove from the oven and let the mini muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  Serve warm or at room temperature. These bites make for a delightful breakfast, snack, or dessert option!
