1 ½ cups all-purpose flour

½ cup unsalted butter, softened

¼ cup powdered sugar

1 large egg yolk

1 tbsp cold water

¼ tsp salt

For the apple filling:

3 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced

2 tbsp brown sugar

1 tsp ground cinnamon

1 tbsp lemon juice

For the custard:

2 large eggs

¾ cup heavy cream

½ cup whole milk

½ cup granulated sugar

1 tsp vanilla extract

¼ tsp ground nutmeg

Make the Tart Crust: In a large bowl, combine the flour and powdered sugar. Add the softened butter and salt, mixing until the mixture resembles coarse crumbs. Stir in the egg yolk and cold water until the dough forms. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Roll Out the Crust: On a floured surface, roll the chilled dough to fit your tart pan (about 11-inch). Transfer the dough to the pan, pressing it gently into the edges. Trim any excess dough from the edges.

        Blind Bake the Crust: Prick the bottom of the crust with a fork, then line with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove the weights and parchment and bake for an additional 5-10 minutes until lightly golden. Let it cool.

          Prepare the Apple Filling: In a bowl, toss the sliced apples with brown sugar, ground cinnamon, and lemon juice. Let it sit while you prepare the custard.

            Make the Custard: In a medium bowl, whisk together the eggs and granulated sugar until smooth. Pour in the heavy cream, whole milk, vanilla extract, and nutmeg. Mix until well combined.

              Assemble the Tart: Layer the seasoned apple slices evenly over the cooled tart crust. Then, gently pour the custard mixture over the apples, ensuring they are covered.

                Bake the Tart: Reduce the oven temperature to 350°F (175°C) and bake the tart for 35-40 minutes, or until the custard is set and lightly golden on top. A knife inserted should come out clean.

                  Cool and Serve: Allow the tart to cool for at least 15 minutes before slicing. Serve warm or at room temperature, possibly with a dollop of whipped cream or a scoop of vanilla ice cream.
