Ingredients

4 cups cubed day-old bread (e.g., brioche or challah)

2 cups milk

1 cup heavy cream

3 large eggs

3/4 cup granulated sugar

2 teaspoons vanilla extract

2 teaspoons ground cinnamon

1/4 teaspoon nutmeg

2 medium apples, peeled, cored, and diced (such as Granny Smith or Honeycrisp)

1/2 cup raisins or dried cranberries (optional)

1/4 cup chopped walnuts or pecans (optional)

Pinch of salt

Butter (for greasing the muffin tin)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with butter to prevent sticking.

Prepare the Bread Mixture: In a large mixing bowl, combine the cubed bread, diced apples, raisins, and nuts (if using). Toss to evenly distribute the ingredients.

Make the Custard: In another bowl, whisk together the milk, heavy cream, eggs, sugar, vanilla, cinnamon, nutmeg, and salt until well combined.

Combine Mixtures: Pour the custard mixture over the bread and apple mixture, ensuring all the bread is soaked. Let it sit for about 15 minutes to absorb the liquid.

Fill Muffin Tin: Spoon the mixture evenly into the prepared muffin cups, filling each about 3/4 full. Press down gently to compact the filling.

Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Cool: Allow the bread pudding cups to cool in the muffin tin for 10 minutes before gently removing them. Use a butter knife to run around the edges if necessary.

Serve: Serve warm with a dusting of powdered sugar, a drizzle of caramel sauce, or a scoop of vanilla ice cream on top for an extra treat. Enjoy!
