Apple & Butternut Squash Soup

Ingredients
  

1 medium butternut squash, peeled and diced (about 4 cups)

2 large apples, peeled, cored, and chopped (preferably Honeycrisp or Granny Smith)

1 medium onion, diced

2 cloves garlic, minced

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a non-vegan option)

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

Salt and freshly ground black pepper, to taste

Fresh parsley or chives, for garnishing

Optional: a dollop of yogurt or sour cream for serving

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent. Add the minced garlic and cook for another minute, stirring constantly to prevent burning.

    Add Squash and Apples: To the pot, add the diced butternut squash and chopped apples. Stir to combine and cook for about 5-7 minutes, allowing the flavors to meld.

      Incorporate Spices: Sprinkle in the ground cinnamon, nutmeg, salt, and black pepper. Stir well to coat the squash and apples evenly in the spices.

        Add Broth: Pour in the vegetable broth, bringing the mixture to a gentle boil. Lower the heat and let it simmer uncovered for about 20 minutes or until the squash and apples are tender.

          Blend the Soup: Once everything is tender, use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, you can transfer the mixture in batches to a countertop blender. Be careful of the hot liquid!

            Creamy Finish: Return the blended soup to the pot if necessary. Stir in the coconut milk (or cream) until well combined. Adjust seasoning with additional salt and pepper if desired. Heat through over low heat.
