Ingredients

2 medium zucchinis

1 cup grated Parmesan cheese

1 cup breadcrumbs (panko for extra crunch)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

Salt and pepper, to taste

1 large egg

Cooking spray or olive oil spray

Instructions

Prep the Zucchini: Wash and dry the zucchinis. Slice them into 1/4-inch thick rounds. Ensure uniform thickness for even cooking.

Set Up Breading Stations: In one bowl, crack and whisk the egg. In another bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper.

Bread the Zucchini: Dip each zucchini slice into the egg, letting excess drip off, and then coat it in the breadcrumb mixture, pressing lightly to adhere. Place the coated zucchini slices on a plate or a wire rack.

Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and preheat for about 3-5 minutes.

Arrange and Spray: Spray the air fryer basket lightly with cooking spray. Place the zucchini chips in a single layer in the basket, ensuring they do not overlap for best results. Lightly spray the tops of the chips with cooking spray to enhance crispiness.

Air Fry the Chips: Cook the zucchini chips in the air fryer for 10-12 minutes, flipping halfway through, until they are golden brown and crispy. Adjust the time as needed based on your air fryer model and the thickness of the chips.

Cool and Serve: Once done, carefully remove the zucchini chips from the air fryer and let them cool slightly. They will continue to crisp up as they cool. Serve warm as a snack or a delicious side dish!
