2 medium zucchinis, cut into sticks (about 4 inches long)

1 cup shredded mozzarella cheese

1/2 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper to taste

Olive oil spray or cooking spray

Prepare the Zucchini: Start by slicing the zucchinis into sticks, about 1/2 inch thick. Set aside.

    Set Up Dredging Station: In three separate shallow dishes, set up your dredging station:

      - In the first dish, add all-purpose flour and season with salt and pepper.

        - In the second dish, beat the eggs until well combined.

          - In the third dish, mix breadcrumbs with garlic powder, dried oregano, paprika, and a pinch of salt.

            Coat the Zucchini Sticks:

              - First, coat each zucchini stick in the flour, shaking off the excess.

                - Next, dip it into the beaten eggs, allowing any excess egg to drip off.

                  - Finally, roll the zucchini stick in the seasoned breadcrumbs, pressing gently to ensure an even coat. Repeat for all sticks.

                    Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. This step helps achieve that crispy texture.
