The star ingredient of this recipe is undoubtedly the shrimp. Choosing high-quality shrimp is crucial to the success of your coconut shrimp. Opt for large shrimp—ideally 16/20 size—since they provide a satisfying bite and hold up well against the coating and cooking process. Freshness is paramount; if possible, buy shrimp that are still on ice or from a reputable seafood counter.

Ingredients

1 pound large shrimp, peeled and deveined

1 cup sweetened shredded coconut

1/2 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray (or olive oil for drizzling)

Instructions

Prepare the Coating: In three separate shallow dishes, set up your dredging stations. In the first dish, add all-purpose flour. In the second dish, whisk the eggs until well combined. In the third dish, combine shredded coconut, panko breadcrumbs, garlic powder, paprika, salt, and pepper.

Coat the Shrimp: Take each shrimp and dip it first into the flour, ensuring it is lightly coated. Shake off any excess flour. Next, dip it into the egg, allowing excess to drip off, and then finally, coat the shrimp with the coconut-breadcrumb mixture, pressing gently to adhere.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Prepare for Frying: Lightly spray the air fryer basket with cooking spray or drizzle a little olive oil to prevent sticking. Arrange the coconut-coated shrimp in a single layer in the basket. Do not overcrowd; you may need to cook in batches.

Air Fry the Shrimp: Air fry the shrimp at 400°F (200°C) for 8 to 10 minutes, flipping halfway through, until they are golden brown and cooked through.

Serve: Remove the shrimp from the air fryer and serve immediately with a sweet chili sauce or your favorite dipping sauce.
