Cauliflower Fried Rice

1 medium head of cauliflower, riced (about 4 cups)

2 tablespoons olive oil or sesame oil

2 large eggs, lightly beaten

1 small onion, diced

2 cloves garlic, minced

1 cup carrots, diced

1 cup frozen peas

3 green onions, sliced

3 tablespoons soy sauce (low sodium recommended)

1 teaspoon sesame oil (optional, for flavor)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Cauliflower: Remove the leaves and stem from the cauliflower, then chop it into florets. Using a food processor, pulse the florets until they resemble rice grains. Set aside.

    Cook the Eggs: In a large skillet or wok, heat 1 tablespoon of your chosen oil over medium-high heat. Pour in the beaten eggs and scramble until just cooked. Remove from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the remaining tablespoon of oil. Once hot, add the diced onion and sauté for 3-4 minutes until translucent. Then, add the garlic and continue to sauté for another 30 seconds until fragrant.

        Add Vegetables: Stir in the diced carrots and cook for about 5 minutes until softened. Then add the frozen peas and riced cauliflower. Cook for another 5-7 minutes, stirring frequently until the cauliflower is tender and lightly browned.

          Combine and Season: Return the scrambled eggs to the skillet, and drizzle in the soy sauce and sesame oil (if using). Toss everything together well to combine and season with salt and pepper to taste.

            Finish with Green Onions: Stir in the sliced green onions just before serving, allowing the heat from the fried rice to soften them slightly.

              Garnish and Serve: Transfer the cauliflower fried rice to a serving dish. Garnish with fresh cilantro or parsley if desired, and enjoy!
